My mother-in-law, Diane, loves preparing food ahead of time.<\/p>\n

Every Sunday, she boils a dozen eggs, cools them, and puts them in the refrigerator so she can grab one whenever she wants a quick breakfast or snack.<\/p>\n

I used to avoid them after about four days.<\/p>\n

One afternoon, she offered me one that had been sitting in the fridge since the previous weekend.<\/p>\n

I hesitated.<\/p>\n

She laughed.<\/p>\n

\u201cThey\u2019re refrigerated. They\u2019re fine.\u201d<\/p>\n

I wasn\u2019t completely convinced, so I looked up the food-safety recommendation.<\/p>\n

According to USDA guidance, hard-boiled eggs can generally be kept in the refrigerator for about one week<\/strong> after cooking.<\/p>\n

That includes eggs stored in their shells or peeled, although keeping them covered and refrigerated is important.<\/p>\n

The bigger issue is temperature.<\/p>\n

Hard-boiled eggs shouldn\u2019t sit out at room temperature for more than about two hours, and they should be refrigerated promptly after cooking.<\/p>\n

I showed Diane what I found.<\/p>\n

She smiled.<\/p>\n

\u201cSo my Sunday eggs can make it to Saturday?\u201d<\/p>\n

\u201cUsually, yes,\u201d I said. \u201cBut after a week, they\u2019re done.\u201d<\/p>\n

Now she writes the cooking date on the container with a marker.<\/p>\n

And I stopped automatically refusing every four-day-old egg.<\/p>\n

I still check when they were made, though.<\/p>\n
